These little bites of heaven are deceptively simple to make. The base is a light and airy dough made with tapioca flour, giving them a unique and delightful texture. Inside, melty cheese oozes out with every bite, creating a flavor explosion that will have you reaching for more.

Ingredients:
- 150 ml (⅔ cup) oil
- 150 ml (⅔ cup) water
- 150 ml (⅔ cup) milk
- 500 g (17.6 oz) tapioca flour
- 13 g (½ tbsp) salt
- 3 eggs
- 200 g (7 oz) grated semi-hard cheese
- 25 g (1 oz) grated Parmesan cheese
Instructions:
- In a saucepan, combine the oil, water, and milk. Bring to a boil.
- In a large bowl, whisk together the tapioca flour and salt.
- Once the liquid is boiling, pour it over the tapioca flour and mix well with a wooden spoon. Let the mixture cool slightly. (see tips)
- Add the eggs and mix with your hands to combine.
- Add the two cheeses and mix well with your hands.
- Grease your hands with oil and start shaping the dough into balls. Each ball should be about 34 g (1.2 oz).
- Place the balls on a baking sheet and bake in a preheated oven at 180 °C (356 °F) for about 35 minutes.
Tips:
- To make the dough easier to work with, let it cool for a few minutes before adding the eggs.
- If the dough is too sticky, add a little more tapioca flour.
- If the dough is too dry, add a little more water.
- You can bake the cheese balls in a muffin tin for a more uniform shape.
- Pão de queijo is best served warm.
